half a cup fresh, diced tomatoes
1/3 cup diced, fresh onion
8 slices mozzarella
1 tsp butter
- Preheat oven 350 F, line baking sheet with parchment paper
- Melt butter in pan, put in seasoned pork for about 5 min, transfer to baking sheet
- Top it with 2 spoons of tomato sauce, a bit of diced onion, diced tomato and 2 slices mozzarella each.
- Bake for about 40 min, let sit for 3 min, serve
The kids had mashed potatoes with it, and it looked good. I had just the pork which was just enough w the tomatoes and onion and such.
