1/4 cup butter
1/4 cup heavy cream or sour cream
1 packet stevia
1/4 teaspoon salt or more to taste
4 eggs
1/2 tsp vanilla extract
1/4 cup coconut flour
1/2 tsp baking powder

  • whisk together melted butter, vanilla extract, sour cream (in my case), stevia, salt and eggs.
  • combine the coconut flour and baking powder before mixing it into the wet ingredients. if it is too thick, coconut flour tends to soak up the liquid pretty quick, add about another 1/4 cup of heave cream or water
  • heat your skillet or pan and bake pancakes. here I would advise you to make smaller pancakes to ensure they wont fall apart when you have to turn them over since they are pretty filling, smaller portions will help you not eat too much or have too much left over.

If you should have left overs, put them in a zip lock bag and you could heat them up in a toaster the next day.
Serve with melted butter, keto friendly syrup, strawberries…. I had mine with some bacon and sausages.
