Keto Pumpkin Bites

1 tsp Vanilla extract
1.5 tsp pumpkin spice
1 tsp cinnamon
2.5 tbsp. coconut flour
4 tsp Stevia
.5 can pumpkin puree
1 pack (8oz) cream cheese
and for the coating
coconut flakes
1tsp Stevia
2 tbsp. cinnamon

  • Mix everything together in a bowl except the ingredients for the coating and place it in your freezer for about 15 minutes until it is frozen enough to be rolled into little balls. (keep on checking on your mixture so it is not too frozen at some point and you would have to let it sit outside the freezer again first)
  • Mix the coconut flakes with the cinnamon and stevia and get it ready for the ball to be dropped in lol
  • Now take a tsp of your mixture, drop it into the flakes and roll it around until it is a coconut covered ball of goodness. Place that into cupcake forms which you place onto a board so you can put it all back into the freezer once you are done with all your cream cheese mixture.
  • Once you are done with rolling, the spoon to flake method is the less messy one I tried so far, just place it in the freezer and take one or two out when ever you want to have a little snack. Maybe let it sit outside your freezer for a few minutes before you eat it.
